Finding an old conversation
Every conversation is kept and searchable. Search matches both the title and the words inside the messages, so you can find a chat by something that was said in it.

The snippet tells you which one you want

Searching
Open search from the sidebar or press ⌘K. Results filter instantly on titles, then a moment later fill in with matches from inside messages. A message match shows a snippet of the matching text, so you can tell which conversation you actually want.
Favourites
Star a conversation to pin it above the list.
Renaming and deleting
Both live in the overflow menu on the conversation's row in the sidebar.
Grouping by project
Conversations can be grouped into projects. See chat projects.
To find something inside one long conversation, use that conversation's own search rather than the sidebar's.
